Mycotoxins are secondary metabolites with a toxic action on humans and animals. They are synthesised by mould-type fungi (Aspergillus sp., Fusarium sp., etc.) in the field or during food storage. The presence of mycotoxins in food is subject to numerous controls and must comply with maximum limits that must not be exceeded.
