Generally speaking, chlorinated products (containing one or more chlorine atoms in their structure) have bactericidal and disinfectant properties and are consequently commonly used on farms, in water treatment and in industrial food manufacturing processes for sanitation purposes.
Chlorates (ClO3-) and other chlorine-derived residues have become an increasing concern in dairy products, food and beverages in recent years.
Sodium and potassium chlorate were used as herbicides, but the use of plant protection and biocidal products containing chlorate is no longer authorised in the EU.
However, chlorates can be generated as a by-product when using chlorinated substances for cleaning or disinfection.
