Bringing together the responses to the regulatory requirements of the Hygiene Package, the Sanitary Control Plan (PMS) comprises three components: control of good hygiene practices, the HACCP plan and, finally, traceability.
As a genuine logbook for managing the quality and hygiene of an establishment, the PMS can nonetheless prove burdensome for teams and lead to oversights or gaps that are detrimental in the event of inspections.
