The authenticity challenge in whey powders

Whey is a valuable raw material, particularly in powder form, used in many applications (infant nutrition, food supplements, processed dairy products, etc.). Whey powders derived from goat’s milk or sheep’s milk are especially sought after for their specific qualities and higher cost.

The main risk for the sector is twofold. First, there is intentional adulteration: the fraudulent addition of cow’s whey (more abundant and less costly) to products labelled as 100% goat or sheep. In addition, there is the risk of cross-contamination by traces of bovine proteins resulting from insufficient cleaning of production equipment (tanks). Whether intentional or accidental, the presence of these proteins constitutes major fraud, as it misleads the consumer about the true composition and origin of the product.
