Context: The organisation responsible for defending and managing the Camargue Rice PGI wants the various stakeholders in the sector to have a shared understanding and vocabulary regarding the Camargue Rice PGI specifications, as well as the various associated instructions.
This is the context in which this training course is offered.

Objectives
Acquire and maintain technical knowledge on the quality assessment of Camargue rice (methods and tools). By the end of the training course, the participant will have acquired a good understanding of the stages from field to finished product, and will be able to check, or have checked, the compliance of the various rice batches with the Camargue Rice PGI documents, as regards physical analysis.
TRAINING CENTRE
Programme
Day 1 – Course structure “General aspects” (approximately 7 hours, adaptable according to audience):
- Presentation of the laboratory
- Rice cultivation and botany
- The different stages of rice processing and by-products (paddy, cargo, milled, broken grains, flour)
- The different families of rice and specific types (japonica, indica, round, medium, long A, long B, Basmati, aromatic, Zizania, risotto rice, coloured wholegrain…)
- Description of mechanical processes used to process rice (husking, milling, sorting of broken grains and defects, parboiling)
- Study of the rice pathway within a rice mill
- Overview of definitions (and their discrepancies) in various regulations or standards, regarding the physical quality of rice (Code of Practice, European Union, ISO…)
- Original Code of Practice for rice intended for human consumption
- Camargue Rice PGI specifications and associated instructions
Day 2 – Course structure “Practical application – technical aspect” (approximately 7 hours, adaptable according to audience):
- Quick recap of day 1
- In-depth study of the Camargue Rice PGI specifications and associated instructions
- Study of the equipment required to carry out physical analyses (ISO moisture, grids, sieves…)
- Performing physical analyses within the framework of the Camargue Rice PGI (paddy, brown, milled and parboiled rice)
- Assessment of compliance of Camargue rice batches
- Sampling techniques
- Focus on specific points
- Possible visit to rice fields (during growing season), if of interest
