{"id":547108,"date":"2026-08-28T17:50:15","date_gmt":"2026-08-28T15:50:15","guid":{"rendered":"https:\/\/dev.phytocontrol.com\/non-classifie\/control-del-riesgo-salmonella\/"},"modified":"2026-08-28T17:50:15","modified_gmt":"2026-08-28T15:50:15","slug":"control-del-riesgo-salmonella","status":"publish","type":"post","link":"https:\/\/dev.phytocontrol.com\/es\/noticias\/control-del-riesgo-salmonella\/","title":{"rendered":"Control del riesgo \u00abSalmonella\u00bb"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><b>El laboratorio Phytocontrol ha desarrollado varios m\u00e9todos acreditados por el COFRAC para el an\u00e1lisis cualitativo de Salmonella en una amplia gama de productos.<\/b><\/p>\n\n<p class=\"wp-block-paragraph\">En Europa, <em>Salmonella spp<\/em> constituye la segunda infecci\u00f3n zoon\u00f3tica m\u00e1s frecuentemente notificada en el ser humano y sigue siendo <strong>la causa m\u00e1s frecuente de brotes de origen alimentario<\/strong>.<\/p>\n\n<p class=\"wp-block-paragraph\">La transmisi\u00f3n al ser humano se produce principalmente por el consumo de alimentos contaminados crudos o poco cocinados. Se estima que la proporci\u00f3n de transmisi\u00f3n por v\u00eda alimentaria es del 95% para las salmonelas no tifoideas y del 80% para las salmonelas tifoideas.<\/p>\n\n<p class=\"wp-block-paragraph\">Los alimentos de mayor riesgo son los huevos y los productos a base de huevo crudo o con tratamiento t\u00e9rmico insuficiente, las carnes (bovino, porcino y aves), los vegetales, especialmente las semillas germinadas, ya sea por el uso de fertilizantes o aguas contaminadas, o por malas pr\u00e1cticas de recolecci\u00f3n y preparaci\u00f3n, y los moluscos.<\/p>\n\n<h3 class=\"wp-block-heading\">La normativa sobre <em>Salmonella spp<\/em><\/h3>\n\n<p class=\"wp-block-paragraph\">Las salmonelas son g\u00e9rmenes pat\u00f3genos asociados a criterios de seguridad en los productos alimenticios destinados al consumo humano seg\u00fan el <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=CELEX%3A02005R2073-20200308&amp;qid=1614791382201\" target=\"_blank\">reglamento 2073\/2005<\/a>. <br\/> En Francia, la <strong>FCD (Federaci\u00f3n del Comercio y la Distribuci\u00f3n)<\/strong> ha introducido criterios adicionales sobre matrices no incluidas en el reglamento europeo.<br\/> <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=CELEX%3A02011R0142-20201208&amp;qid=1614791410276\" target=\"_blank\">El reglamento 142\/2011<\/a> tambi\u00e9n fija criterios que deben respetarse para los productos destinados a la alimentaci\u00f3n animal. <br\/> Las salmonelas est\u00e1n identificadas como un peligro y se controlan en la importaci\u00f3n de determinadas matrices procedentes de terceros pa\u00edses, en particular las semillas de s\u00e9samo procedentes de la India.<br\/> La lista de matrices vigiladas figura en <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=celex%3A32019R1793\" target=\"_blank\">el anexo I del reglamento 2019\/1793<\/a>.<\/p>\n\n<p class=\"wp-block-paragraph\">Seg\u00fan el \u00faltimo informe anual 2019 del RASFF:<br\/><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Se notificaron 575 alertas en la alimentaci\u00f3n humana relacionadas con microorganismos pat\u00f3genos, principalmente en productos de origen animal. Salmonella es el pat\u00f3geno notificado con mayor frecuencia (371 notificaciones).<\/li>\n\n\n\n<li>Se notificaron 166 alertas en la alimentaci\u00f3n animal en diferentes tipos de materias primas, as\u00ed como en alimentos para animales de compa\u00f1\u00eda.<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\">La soluci\u00f3n del Laboratorio Phytocontrol<\/h3>\n\n<p class=\"wp-block-paragraph\">El laboratorio est\u00e1 en condiciones de realizar la b\u00fasqueda de <em>Salmonella<\/em> mediante el m\u00e9todo de referencia <strong>NF EN ISO 6579-1<\/strong>, mediante el m\u00e9todo r\u00e1pido <strong>BRD 07\/11-12\/05<\/strong> o mediante el m\u00e9todo molecular por PCR en tiempo real <strong>BRD 07\/06-07\/04<\/strong>.<\/p>\n\n<p class=\"wp-block-paragraph\">Estos m\u00e9todos se han desarrollado bajo acreditaci\u00f3n COFRAC y permiten realizar la b\u00fasqueda del germen en productos destinados al consumo humano o a la alimentaci\u00f3n animal, y en muestras de entorno del sector agroalimentario (tipo tomas de muestras de superficie).<\/p>\n\n<p class=\"wp-block-paragraph\">\u00bfNecesita informaci\u00f3n t\u00e9cnica, normativa y de tarifas?
