Biogenic amines are naturally present in food (wine, fish, milk, cured meats, etc.) but, due to their properties, they can cause headaches, nausea and skin redness, among other symptoms, in sensitive individuals. Some, such as putrescine and cadaverine, can have an unpleasant odour. They are also used as hygiene indicators, such as histamine in fish.<\/p>\n\n
To meet its clients’ control plan requirements, Phytocontrol laboratory is able to analyse and quantify the main biogenic amines by liquid chromatography coupled with mass spectrometry in milk and alcoholic beverages.<\/p>\n\n
