Deoxynivalenol, zearalenone and fumonisins are major mycotoxins regulated under European regulation 1881\/2006 and its amendments.<\/p>\n

Recent EFSA studies have highlighted other derivatives of these molecules: modified mycotoxins.<\/p>\n

These “modified” mycotoxins result either from a plant’s defence reaction following infection or are produced by the fungus itself. They are called “masked” when they result from plant metabolism.<\/p>\n

The main masked forms:<\/p>\n

– of DON: 3-acetyl-DON (3-Ac-DON), 15-acetyl-DON (15-Ac-DON) and DON-3-glucoside in seeds and cereals.<\/p>\n

– of fumonisins: HFB1 in maize<\/p>\n

– of zearalenone: alpha-zearalenol, beta-zearalenol, alpha-zearalanol, beta-zearalanol, zearalanone and ZEA-14-glucoside in seeds and cereals.<\/p>\n

The first results of EFSA studies showed that the modified forms of mycotoxins have the same toxicity as their “parent” compounds.<\/p>\n

Plant-based foods are more susceptible to contamination by these metabolites. For animal products, no data are available, but their occurrence is expected to be low.<\/p>\n

The health impact of these “modified” and “masked” mycotoxins is still poorly understood.<\/p>\n

There is currently no regulatory project underway, but an evaluation process is ongoing with data collection.<\/p>\n
