 <\/p>\n

Regulation (EU) 2017\/2158<\/strong> establishing mitigation measures<\/strong> and benchmark levels<\/strong> for the reduction of the presence of acrylamide in food was published today in the Official Journal of the European Union.<\/p>\n

Acrylamide is a substance formed from compounds naturally present in certain foodstuffs, notably asparagine and reducing sugars such as glucose and fructose, at temperatures above 120\u00b0C and under low-moisture conditions.
\nAccording to the EFSA opinion published in 2015<\/a>, acrylamide has carcinogenic effects for all types of consumers.<\/p>\n

Regulation (EU) 2017\/2158 sets mitigation measures to reduce the presence of acrylamide in food, as well as benchmark levels. These benchmark levels are performance indicators; they help ensure the effectiveness of the mitigation measures put in place by the food business operator. They are expected to be reviewed every three years.
\nApplying the mitigation measures set out in the regulation may lead to changes in operators’ production processes; as a result, the regulation will only apply from 11 April 2018.<\/p>\n

In Annex I<\/strong> of the regulation, mitigation measures are specified by product type:
\n– Raw potato products (sliced chips, French fries and other cut potato products obtained after deep-frying in oil or oven baking)
\n– Crisps, snacks, crackers and other potato products based on potato dough
\n– Fine bakery wares
\n– Breakfast cereals
\n– Coffee
\n– Coffee substitutes containing more than 50% cereals
\n– Coffee substitutes containing more than 50% chicory
\n– Biscuits and rusks for babies and infant cereals
\n– Baby food in jars (low-acidity, prune-based food products)
\n– Bread<\/p>\n

Annex II Part A<\/strong> describes mitigation measures for operators carrying out retail activities and\/or supplying directly only the local retail trade.<\/p>\n

Annex II Part B<\/strong> describes additional mitigation measures to be applied by operators operating in facilities under direct control and trading under a brand or commercial licence. These operators must also apply the measures in Annex II Part A.<\/p>\n

Annex III<\/strong> sets out sampling and analysis requirements.<\/p>\n

Annex IV<\/strong> sets out the benchmark levels below; for information, you will also find the indicative values initially set under Recommendation 2013\/647\/EU so you can easily identify the changes made. Food business operators that produce and place on the market the foodstuffs concerned must apply the specified mitigation measures and achieve acrylamide levels below the benchmark levels.<\/strong><\/p>\n

If the benchmark levels are exceeded, operators must review the mitigation measures in place and adjust their processes and controls.<\/p>\n
