<\/p>\n\n

The DGCCRF carried out a survey<\/a> to check smoking practices for foodstuffs<\/strong> in the meat, delicatessen and fish sectors. Investigators also verified that self-checks were being carried out and that regulatory provisions relating to smoke flavourings were being complied with.<\/p>\n\n

The non-compliance rate<\/strong> across the 230 establishments inspected stands at 35%<\/strong>.<\/p>\n\n

Smoking is a known preservation<\/strong> method but is mainly used to give food a particular flavour<\/strong>, or a different texture<\/strong> and colour<\/strong>.<\/p>\n\n

Smoking can be carried out with wood<\/strong> (the treatment exposes the food to smoke from the pyrolysis of wood shavings or chips) or by using smoke flavourings<\/strong>. The use of the latter is governed by EU Regulation No. 1321\/2013<\/a>, which sets maximum levels in food.<\/p>\n\n

Investigators also identified a risk relating to PAHs<\/strong>, which is not always controlled. Some polycyclic aromatic hydrocarbons (PAHs) have carcinogenic and genotoxic properties. They are introduced by smoke during traditional smoking<\/strong> or through the use of smoke flavourings<\/strong>.<\/p>\n\n

EC Regulation No. 1881\/2006<\/a> sets maximum PAH levels in smoked meat and fish<\/strong>.<\/p>\n\n
