It can occur in inorganic and organic form. Methylmercury (MeHg) is the most common form of organic mercury in the food chain.<\/p>\n\n<p class=\"wp-block-paragraph\">EFSA has established a <strong>tolerable weekly intake (TWI)<\/strong> of <strong>4 \u00b5g\/kg body weight<\/strong> for inorganic mercury and <strong>1.3 \u00b5g\/kg body weight<\/strong> for methylmercury (both expressed as mercury).<\/p>\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=CELEX%3A32022R0617&amp;qid=1649926916840\"><strong>Regulation (EU) 2022\/617<\/strong><\/a> has just been published and sets new <strong>mercury<\/strong> levels in various fish and in salt:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>0.3 mg\/kg<\/strong> in certain fishery products: cephalopods, marine gastropods, anchovy, Alaska pollock, cod, Atlantic herring, pangasius, carp, dab, mackerel, European flounder, European plaice, sprat, giant glass catfish, pollock, saithe, salmon, trout, sardine, sole, shark catfish, whiting.<\/li>\n\n\n\n<li><strong>0.1 mg\/kg<\/strong> in salt.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">These levels will apply from <strong><u>3 May 2022<\/u><\/strong>.<\/p>\n\n<p class=\"wp-block-paragraph\">Article 2 of this regulation provides that foodstuffs already placed on the market before 3 May 2022 may remain on the market until their minimum durability date or use-by date.<\/p>\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.fao.org\/fao-who-codexalimentarius\/sh-proxy\/fr\/?lnk=1&amp;url=https%253A%252F%252Fworkspace.fao.org%252Fsites%252Fcodex%252FStandards%252FCXS%2B193-1995%252FCXS_193f.pdf\"><strong>CODEX standard CXS 193-1995<\/strong><\/a> sets maximum limits for <strong>methylmercury<\/strong> in tuna (1.2 mg\/kg), alfonsino (1.5 mg\/kg), marlin (1.7 mg\/kg) and shark (1.6 mg\/kg).<\/p>\n\n<p class=\"wp-block-paragraph\">To date, no limit has been set for methylmercury in foodstuffs in the EU; a <strong>recommendation<\/strong> on monitoring the presence of <strong>methylmercury<\/strong> and <strong>total mercury<\/strong> in fish, crustaceans and bivalve molluscs should soon be published. This monitoring will cover a wide variety of fish species reflecting consumption habits, in order to enable an accurate estimate of consumer exposure to mercury.<\/p>\n\n<p class=\"wp-block-paragraph\">Please note that your Phytocontrol laboratory offers <strong>mercury<\/strong> analysis under COFRAC accreditation; you can consult our COFRAC technical annex No. 1-1904, available in your customer area or on the COFRAC website.<\/p>\n\n<p class=\"wp-block-paragraph\">Need technical, regulatory or pricing information?
