{"id":521666,"date":"2026-02-18T16:32:28","date_gmt":"2026-02-18T15:32:28","guid":{"rendered":"https:\/\/www.phytocontrol.com\/?p=521666"},"modified":"2026-08-27T23:55:54","modified_gmt":"2026-08-27T21:55:54","slug":"analysis-of-bacillus-cereus-and-cereulide-toxin-in-infant-formula","status":"publish","type":"post","link":"https:\/\/dev.phytocontrol.com\/en\/news\/analysis-of-bacillus-cereus-and-cereulide-toxin-in-infant-formula\/","title":{"rendered":"Analyses of Bacillus cereus and cereulide toxin in infant formula"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">In recent weeks, health news has been marked by a wave of withdrawals and recalls of infant formula in many countries following the detection of a toxin called <em>cereulide<\/em> produced by <em>Bacillus cereus<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">To address this health issue, Phytocontrol laboratory supports manufacturers by carrying out cereulide toxin analysis in <strong>liquid, powdered and reconstituted milk<\/strong>.<\/p>\n\n<h3 class=\"wp-block-heading\">Why is this toxin a concern?<\/h3>\n\n<p class=\"wp-block-paragraph\"><em>Bacillus cereus<\/em> is a bacterium present in the environment (soil, dust, raw materials) that can contaminate foodstuffs, including dairy-based preparations. Some strains produce cereulide, a toxin that is particularly heat-stable and difficult to eliminate even during preparation or reconstitution of milk. This toxin poses a major risk to infants.<\/p>\n\n<p class=\"wp-block-paragraph\">Recent cases have shown that the toxin can be present both in an ingredient and in the product after reconstitution, which complicates its detection in the absence of specific analyses.<\/p>\n\n<p class=\"wp-block-paragraph\">\u00a0<\/p>\n\n<h3 class=\"wp-block-heading\">The regulatory framework<\/h3>\n\n<p class=\"wp-block-paragraph\"><u><strong><em>Bacillus cereus<\/em>:<\/strong><\/u> Regulation (EU) 2073\/2005 sets a process hygiene criterion for Bacillus cereus (presumptive) in powdered infant formula at 50 CFU\/g.<\/p>\n\n<p class=\"wp-block-paragraph\"><u><strong>Cereulide toxin:<\/strong><\/u> EFSA was requested to assess the risks associated with the presence of cereulide toxin in infant formula and to propose risk management criteria. It published <a href=\"https:\/\/efsa.onlinelibrary.wiley.com\/doi\/epdf\/10.2903\/j.efsa.2026.9941\" target=\"_blank\" rel=\"noopener\">its opinion on 2 February<\/a> and lowered the ARfD to 0.014 \u00b5g\/kg body weight for cereulide in infants. It concluded that cereulide concentrations in reconstituted (liquid) infant formula exceeding the thresholds below could lead to safety levels being exceeded:<\/p>\n\n<ul class=\"wp-block-list list_chevron_right_orange\">\n<li>0.054 \u00b5g\/L for infant formula (stage 1)<\/li>\n\n\n\n<li>0.1 \u00b5g\/L for follow-on formula (stage 2)<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">\u00a0<\/p>\n\n<h3 class=\"wp-block-heading\">The Phytocontrol solution<\/h3>\n\n<p class=\"wp-block-paragraph\">To address this issue, we support manufacturers and authorities in managing the <em>Bacillus cereus<\/em> risk and the presence of <em>cereulide<\/em> toxin in powdered and reconstituted milk.<\/p>\n\n<p class=\"wp-block-paragraph\">Our LC-MS\/MS analytical approach, adapted from ISO 18465:2017, guarantees excellent sensitivity, high robustness and an optimised turnaround time. <strong>We have also targeted limits of quantification lower than the regulatory requirements applicable to cereulide, reaching 0.020 \u00b5g\/L for liquid and reconstituted milk.<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">In addition to analyses, we support you through audits aimed at updating your Food Safety Management Plan and HACCP approach, taking emerging risks into account.<\/p>\n\n<p class=\"wp-block-paragraph\">\u00a0<\/p>\n\n<p class=\"wp-block-paragraph\">Need technical, regulatory or pricing information?
