Acrylamide is a substance formed from compounds naturally present in certain foodstuffs, in particular asparagine and reducing sugars such as glucose and fructose, at temperatures above 120\u00b0C and under low-humidity conditions.
\nAccording to the EFSA opinion published in 2015, acrylamide has carcinogenic effects for all types of consumers.<\/p>\n

Regulation (EU) 2017\/2158<\/a> introduces specific obligations for operators who produce and place certain foodstuffs on the market, namely the establishment of a programme for their own sampling and analysis of acrylamide levels and the application of specific mitigation measures aimed at achieving acrylamide levels that are as low as reasonably achievable and below the benchmark levels set by this regulation.<\/p>\n

There is not yet sufficient data available on the presence of acrylamide in foodstuffs that do not fall under Regulation (EU) 2017\/2158, but which could show high acrylamide levels and\/or could significantly contribute to dietary exposure to acrylamide.<\/p>\n

The recently published Recommendation (EU) 2019\/1888<\/a> concerns the monitoring of the presence of acrylamide in certain foodstuffs.<\/p>\n

To guide competent authorities and food business operators regarding which foods to monitor, a non-exhaustive list of food\/foodstuff categories has been drawn up with a view to adopting possible risk management measures:<\/p>\n

Potato-based products<\/strong><\/p>\n

\u2014 Potato pancakes<\/p>\n

\u2014 Croquettes, duchess potatoes, potato balls, etc.<\/p>\n

\u2014 Potato gratins (and vegetable gratins)<\/p>\n

\u2014 Potato and meat dishes<\/p>\n

\u2014 Potato and cheese dishes<\/p>\n

Bakery products<\/strong><\/p>\n

\u2014 Bread rolls (burger buns, wholemeal rolls and milk rolls, etc.)<\/p>\n

\u2014 Pita bread, Mexican tortillas<\/p>\n

\u2014 Croissants<\/p>\n

\u2014 Doughnuts<\/p>\n

\u2014 Speciality breads (such as pumpernickel bread, olive ciabatta, onion bread, etc.)<\/p>\n

\u2014 Pancakes<\/p>\n

\u2014 Crispy biscuits made from a thin strip of dough and deep-fried in oil<\/p>\n

\u2014 Churros<\/p>\n

Cereal products<\/strong><\/p>\n

\u2014 Rice crackers<\/p>\n

\u2014 Corn crackers<\/p>\n

\u2014 Cereal-based snacks (such as products based on extruded corn and\/or wheat)<\/p>\n

\u2014 Honey-toasted muesli<\/p>\n
